Begin by melting your shortening in a saucepan over medium high heat. Once it is melted take off of the heat to cool.
In a large bowl, add water, sugar, and yeast. Whisk together. Then allow to rest and bloom for about 10 minutes.
While that is resting, in another bowl add flour and salt and stir together until combined.
Add 1/2 of the flour mixture into the yeast mixture, stir, then add shortening and eggs and mixture together.
Add one cup of flour at a time from this point on until a dough is formed. Knead for about 5 minutes or until smooth.
This is where you can put the bowl in the refrigerator for about a week if needed. Add plastic wrap or beeswax wrap to the top of your bowl and place in the frig.
To continue and make rolls the same day, Take the dough and make them into your rolls.
Allow to rise until double in size. Usually 1 to 2 hours.
Preheat oven to 400 degrees. Then bake for 8 to 10 minutes or until golden brown.
