Farmer’s Breakfast Casserole

This skillet meal is a great start to a busy or even slow day. We even love it for supper a lot of nights. It’s an easy one pan wonder, if you like those.

I first take my thawed sausage and scramble it up in my hot cast iron skillet. Till it’s done and brown. The hard part here is not to eat the sausage.

While the sausage is cooking I like to go ahead and dice my veggies. Here I used potatoes, onions, and broccoli. But any veggies will work. We use what’s coming out of the garden or what is needed to be cooked.

I add my oil to my skillet and let it get warming up. Add your potatoes and let them fry for a few minutes. You’re looking for the crispy edges not done tenderness. When the potatoes start getting crispy, then add your other veggies. Let them cook for a few more minutes.

Add your sausage and stir it around. Scramble your eggs in a separate bowl.

Pour eggs over the sausage mixture. Make sure it’s in all the nooks and crannies.

Now the best part, adding the cheese. I use cheddar or mozzarella. Cheddar is our favorite though. Cover the whole skillet with cheese. You can put as little or as much as you want. Or completely omit the cheese if you need a dairy free option.

Bake in a 375 degree oven until the egg mixture is all done. When a knife comes out of the center clean.

Ingredients

  • 1 pound sausage
  • 1-2 potatoes (chopped)
  • 2 tbsp oil
  • 1-2 cups veggies (chopped) any type of vegetables you want to use.
  • 8-12 eggs
  • 2 cups shredded cheese

Instructions

  • Preheat oven to 375℉
  • Heat up skillet, then place sausage in pan and scramble until done. While sausage is scrambling, chop your veggies.
  • Remove sausage from pan, add oil to pan to warm and then add the chopped potatoes. Cook until crispy.
  • Add the other veggies and cook until halfway tender
  • Scramble the eggs in a separate. Once the vegetables are ready turn the heat off of the skillet.
  • Pour the eggs over the skillet. Make sure the eggs spread throughout the entire pan.
  • Add your cheese to the top. You can definitely measure with your heart here.
  • Place in the preheated oven. Bake until the eggs are done and a knife comes out of the center clean.
  • Next, Serve hot on plate and enjoy!
