Strawberry Muffins
The perfect quick and easy summer breakfast
Equipment
- Stand mixer optional
Ingredients
- 1 stick butter room temp or softened
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- ½ cup milk
- 1 tbsp lemon juice
- 1⅓ cup flour any kind
- 1 tsp baking powder
- ½ tsp salt
- 1 cup frozen strawberries or measure with your heart
Instructions
- Preheat oven to 350°
- In a stand mixer, cream together the soft butter and sugar
- once creamed together, add your egg and vanilla and allow to mix until well combined.
- Then go ahead and add in your salt, baking powder, and flour into your mixer. Mix just a couple of times around.
- Then in a measuring cup add your milk and lemon juice. Add to the stand mixer. Slowly while mixing on low speed. Combine until batter is fully incorporated.
- Add in your cup of frozen strawberries or whatever frozen fruit you like. I have even done chocolate chips and peanut butter chips! Whatever your heart desires. Mix until just combined.
- In a greased muffin pan or a muffin pan with liner, spoon in the batter until each muffin cup is about ¾ full.
- Slide into the oven and bake at 350° for about 25 minutes. You know it's done with you stick a toothpick in the center and it comes out clean! Enjoy!
